Buckwheat, baking and freshness: your questions answered

Why buckwheat

A seed, not a grain

Despite the name, buckwheat isn't a kind of wheat, or a grain at all. It's the seed of a flowering plant related to rhubarb and sorrel. Ground into flour, it's the base of every cracker we make.

We pair it with sunflower seeds, linseed and sesame, and a little extra virgin olive oil. Together they give each 25g serve over 3g of fibre and about 4g of plant protein, with well under 1g of sugar and nothing added to sweeten it.

That's why the ingredient list is short: buckwheat flour, seeds, olive oil, sea salt and, depending on the flavour, herbs or spices. Each one is there for a reason.

How they're made

Baked, never fried

Many crackers and crisps are fried, or made with refined seed oils, to get them crunchy fast. Ours are baked, never fried. We roll each batch thin by hand and bake it until the seeds toast and the crackers snap.

The only oil is extra virgin olive oil, and there's only as much as the dough needs. Every batch is made in Byron Bay with water filtered by reverse osmosis.

Freshness

A shorter shelf life, on purpose

Many packaged crackers are made to last much longer, often with the help of preservatives or added antioxidants. We don't add any. The natural oils in seeds lose their freshness over time, so every bag has a best-before date three months from baking, and we bake in small batches so everything is always fresh.

Once a bag is open, close it well and eat them within a week. In our experience, a bag rarely lasts one sitting.

Quick answers

Are they gluten-free?

We don't make that claim. Buckwheat isn't related to wheat, but our flour isn't certified gluten-free and the crackers aren't tested for gluten. If you have coeliac disease, please don't rely on them being gluten-free.

What allergens do they contain?

All three flavours contain sesame seeds. The full ingredients are on each product page and on the back of every bag.

Are they vegan?

Yes. Every flavour is made from buckwheat flour, seeds, extra virgin olive oil, sea salt and herbs or spices. Nothing comes from animals.

Are they organic?

Every ingredient except the sea salt is certified organic, down to the extra virgin olive oil and the herbs.

How long do they keep?

Unopened, three months from baking: the best-before date is on every bag. Once opened, close the bag well, keep it somewhere cool and dry, and eat them within a week.

How does shipping work?

We sell online in 6-packs and ship Australia-wide for a flat $15, however many packs you order.

What's in the variety pack?

Two bags each of Mixed Herbs, Smoked Paprika and Sea Salt.
